I say try it.. Gene you could cut the recipe in half.. I just make the whole recipe so we could have it for a couple of days.. I would think freezing would do just fine.. Then when you put it in the pan to warm you could put a tiny bit of milk. I am going to also try it again with soymilk.. Something came to mind last night. I thought you could even add frozen English Peas to it along with maybe some baked or boiled chicken chopped up.. There are all kinds of things to do and it is so easy and sooo good.. I never have made regular mac and cheese only the kind out of box on stove top that sucked with the fake cheese stuff. But this was good and so comforting. I saw a Fix it and Forget it diabetic book. I am going to try to find that one online or wait and see if the Dollar Store gets it.. But basically it looked like the regular one. Just watch what you put with what..

I love that cookbook! I've never tried the Mac and Cheese, although my children LOVE any kind of macaroni and cheese dish. That's the first thing they head for at the family gatherings. I will have to give the Fix It and Forget It recipe a try. Thanks for sharing your research :-)

Sounds good to me! But if I made that it would go bad before I could eat it all....let me know how it works when you freeze some.

Sounds yummy. Thank you for sharing. I'm not a good cook and fortunately my husband does most of the cooking. But I do try to cook periodically and have done pretty well with some crock pot dishes. This sounds yummy and something I could handle. I'll definitely give it a try based on your recommendation. Thank you...I do appreciate. I don't want my hubby trading me in either!
