Rice Pudding

I made some tonight and I promised I would post the recipe. So here goes.

1/2 cup white rice uncooked.

1 1/3 cupsĀ skim milk

1/4 cup Splenda

1/4 teaspoon salt I just pinched some I did not measure

1/3 cup raisins..That is one of those tiny boxes, individual

1 1/3 tablespoons margarine.. (I am radical, I don’t follow rules!)

1/4 teaspoon vanilla extract

1/4 ground cinnamon

In med pan I brought 1 cup water to boil and added the rice. Stirred it and put on low for 20 minutes. About 10 mins into the simmer I noticed I need a tad bit more water so I added.

When it was finished cooking I rinsed it and held the lid to drain the water..I dont like the starch water.

I added the splenda, salt and milk and cooked it on medium until it got creamy. Maybe 10 minutes. Then I added the cinnamon, raisins. took off stove and added margarine and vanilla. Stirred it all up and put in bowl and served warm. You could cut up an apple and put it in there or just try all kinds of things. But this worked for me.

It was good and Gary said “Is this all you cooked?” First time and I did not want to cook a lot.

But you could double or triple the recipe and have it in the refrig..just heat up in micro.
